Carmelized Onion Quiche
A wonderful, easy breakfast, brunch, lunch, dinner item. You can use a frozen pie shell, a refrigerator pie shell, or better yet, make your own with your favorite recipe. Pair with a salad and you have a nice meal. Ingredients
- 1 pie shell
- l/4 c. olive oil
- 5 c. thinly sliced onions
- 5 eggs
- 1 c. 2% milk
- 1 Tbsp. Dijon mustard
- l/2 tsp. salt
- l/4 tsp. nutmeg
- 1 c. shredded Gruyere or Swiss cheese
Directions
- Heat oven to 375 degrees F.
- Use a 9" pie plate
- Have unbaked pie crust in refrigerator until ready to fill.
- Heat oil in large sauté pan over medium heat. Add onions and cook until browned and soft, stirring once in a while for about 35 minutes. (I usually add water to help soften the onions more quickly). After browned and limp and liquid reduced, set aside to cool a bit.
- Whisk together eggs, milk, mustard, salt and nutmeg in bowl. Remove pie plate from fridge, sprinkle l/2 cheese evenly on bottom of pie crust and top the cheese with l/2 of the onions. Pour in eggs and top with remaining onions and cheese.
- Bake approximately 35-40 minutes OR until center of eggs are solid and toppings are browned lightly.
- Cool 10 min. and enjoy.
