Carmelized Onion Quiche

A wonderful, easy breakfast, brunch, lunch, dinner item. You can use a frozen pie shell, a refrigerator pie shell, or better yet, make your own with your favorite recipe. Pair with a salad and you have a nice meal.

Ingredients

  • 1 pie shell
  • l/4 c. olive oil
  • 5 c. thinly sliced onions
  • 5 eggs
  • 1 c. 2% milk
  • 1 Tbsp. Dijon mustard
  • l/2 tsp. salt
  • l/4 tsp. nutmeg
  • 1 c. shredded Gruyere or Swiss cheese

Directions

  1. Heat oven to 375 degrees F.
  2. Use a 9" pie plate
  3. Have unbaked pie crust in refrigerator until ready to fill.
  4. Heat oil in large sauté pan over medium heat. Add onions and cook until browned and soft, stirring once in a while for about 35 minutes. (I usually add water to help soften the onions more quickly). After browned and limp and liquid reduced, set aside to cool a bit.
  5. Whisk together eggs, milk, mustard, salt and nutmeg in bowl. Remove pie plate from fridge, sprinkle l/2 cheese evenly on bottom of pie crust and top the cheese with l/2 of the onions. Pour in eggs and top with remaining onions and cheese.
  6. Bake approximately 35-40 minutes OR until center of eggs are solid and toppings are browned lightly.
  7. Cool 10 min. and enjoy.
