  • Caramelized Pears With Tiramisu Cream

    Ingredients

    • 4 x pear, ripe but very hard, (preferably Bartlett or possibly Bosc)
    • 67/100 c. granulated sugar
    • 2 Tbsp. minced candied ginger
    • 1 x thinly sliced lemon Filling
    • 1/2 c. light ricotta cheese
    • 2 Tbsp. granulated sugar
    • 1/2 tsp vanilla
    • 2 tsp dark rum or possibly 2 tsp extra strong coffee or possibly 2 tsp coffee liqueur
    • 2 Tbsp. minced chocolate, bittersweet or possibly 2 tbsp minced semisweet chocolate
    • 2 Tbsp. icing sugar, sifted

    Directions

    1. Preparation time is 20 min.
    2. Cut pears in half lengthwise. Scoop out cores (a melon baller works well).
    3. Sprinkle sugar over the bottom of a large skillet which will hold all the pears in one layer.
    4. Cook, uncovered, on medium-high heat, till sugar begins to brown, but be careful not to burn.
    5. Add in pears cut side down. Sprinkle with ginger and arrange lemon slices over top. Reduce heat and cook gently for about 10 min. Cover.
    6. Remove from heat and allow to rest for 30 min.
    7. Filling:In a small bowl, combine ricotta, sugar, vanilla and rum.
    8. Place minced chocolate in a strainer to remove any chocolate "dust" (this prevents the ricotta from discolouring). Stir chocolate pcs into filling.
    9. To serve, place a pear half, cut side up, on each plate. Scoop or possibly spoon some cheese onto each half.
    10. Drizzle pear and plate with any syrup from cooking.
    11. Arrange a cooked lemon slice on each and dust with icing sugar.
