Cannellini Beans With Italian Sausage

- 1 Tbsp. Extra virgin olive oil
- 3 x Warm Italian sausages
- 3 x Sweet Italian sausages
- 4 x Cloves Garlic, chopped
- 1 Tbsp. Minced fresh sage Or possibly
- 1 tsp Dry sage
- 1 can Italian plum tomatoes, liquid removed and coarsley minced (28 ounce.)
- 2 can Cannellini beans (16 ounce. ea.), rinsed and liquid removed Salt and pepper to taste
Directions
- Heat oil in an ovenproof, flameproof medium casserole and saute/fry' sausages 15 min. Drain off excess fat. Add in garlic and sage and saute/fry' till garlic is golden brown. Cold and slice sausages into 1 1/2" pcs. Add in tomatoes and beans and simmer till well cooked, about 15 min, stirring occasionaly. Season to taste.
- Serves 6.
- Note: This may be held in oven for 30 min at 300 degrees.
