Cannellini And Italian Sausage Stew
Ingredients
- 1/2 lb Italian sausage, or possibly more
- 2 med Onions, coarsely minced
- 2 x Cloves garlic, chopped
- 14 1/2 ounce Italian plum tomatoes, Canned, undrained, Minced
- 15 ounce Cannellini beans, canned, Liquid removed and rinsed
- 2/3 c. Spaghetti sauce
- 1 Tbsp. Italian seasoning
- 1 lrg Green bell pepper
- 1 med Zucchini, cut in 1/2" Pcs
- 1/4 tsp Red pepper flakes Grated parmesan cheese, to Taste
Directions
- Cut the sausage into 3/4-inch pcs; remove casing. Cook in large skillet over medium-low heat till lightly browned, about 4 mins. Add in onions and garlic to the skillet; cook till sausage is no longer pink; about 3 mins. Drain skillet.
- Add in tomatoes, beans, spaghetti sauce and herbs. Bring to boil, reduce heat and simmer 15 mins. Meanwhile, core, seed, and remove ribs from the bell pepper; cut into 3/4-inch squares or possibly diamonds. Cut zucchini into 1/2-inch slices, then quarter the slices. Add in sweet pepper, zucchini and warm pepper; simmer about 5 mins. longer or possibly till vegetables are tender. Serve with Parmesan.
