  • Candied Bacon Maple Banana Bread

    Ingredients

    • 1 ½ cups sifted All-Purpose Flour
    • 2 ½ teaspoons baking powder
    • ¼ teaspoon salt
    • 5 Tablespoons butter
    • 2/3 cup granulated sugar
    • ¾ teaspoon lemon zest
    • 1 egg
    • 1 cup ripe banana, puréed
    • ½ cup nuts, toasted, chopped
    • 4 oz. crumbled, cooked bacon
    • 2 Tablespoons maple sugar
    • 2 sticks butter, softened to room temperature

    Directions

    1. Sift together flour, baking powder, and salt.
    2. In a separate bowl, cream the granulated sugar and butter together until smooth.
    3. Beat in the egg and banana.
    4. Fold in the nuts.
    5. Brush the insides of a medium load pan with butter and place the batter in the pan.
    6. Bake at 350°F for about an hour, or until done.
    7. Allow to cool before slicing.
    8. In a small pan heat the cooked bacon until it begins to release any
    9. congealed fat and drain the fat well.
    10. Add the of maple sugar and heat, over low heat, stirring frequently, until the sugar melts and coats the bacon well.
    11. Allow to cool and break up into small pieces.
    12. Mix bacon pieces into butter until smooth.
