Maple Banana Muffins
Mmm.. maple! Ingredients
- Wet Ingredients
- 1 banana
- 1/4 c oil
- 8 tsp maple sugar
- 1 egg
- 2 T rice milk
- 1/2 t. vanilla
- Dry Ingredients
- 1 c barley flour
- 1/4 c raisins (finely chopped)
- 1 1/2 t. corn starch
- 1/2 t. baking powder
- 1/2 t. baking soda
- 1/4 t. salt
Directions
- Preheat Oven to 350 degrees.
- Blend wet ingredients very well.
- In a seperate bowl mix together the dry ingredients.
- Combine wet with dry and mix until they are just incorporated.
- Turn into a lightly-oiled muffin tin.
- Bake at 350 dgrees for 15-20 mins.
- Cool for 15 mins on rack
