  • California Chicken Salad

    Ingredients

    • 2 c. Cooked chicken -- minced
    • 1/2 c. Monterey jack cheese -- Shredded
    • 1/2 c. Cheddar cheese -- shredded
    • 1 x Avocado -- diced
    • 1/2 c. Olives -- minced
    • 1 x Tomatillos -- minced
    • 1/2 tsp Chili pwdr
    • 1/4 tsp Garlic pwdr
    • 1 tsp Onions -- minced Black pepper
    • 2 Tbsp. Mayonnaise
    • 1 tsp Green chiles -- chopped
    • 2 tsp Sun-dry tomatoes, Oil-packed -- chopped

    Directions

    1. * A tomatillo is also known as a Mexican Cherry tomato.** Use a dash of onion juice instead of chopped onions if preferred.
    2. Lightly mix the first 10 ingredients together. Moisten with mayonnaise, using more or possibly less as desired. Mound in 4 decorative serving dishes, sprinkle the chopped green chilies and chopped sun-dry tomatoes on top.
    3. Refrigeratefor 1 hour. Serve with corn chips or possibly crisp-fried tortillas as a light lunch.
