  • Cabbage Bowl Salad

    Ingredients

    • 1 lrg Head cabbage
    • 3 c. Diced cooked potatoes sm Onion, grated or possibly finely minced
    • 4 x Hard cooked Large eggs, minced
    • 1 1/2 tsp Salt
    • 1/4 tsp Grnd pepper
    • 1/2 c. Reduced French dressing
    • 1/4 c. Reduced fat Mayonnaise or possibly salad dressing Minced parsley

    Directions

    1. Hollow out the center of the cabbage, leaving a half inch to 1 inch shell.
    2. Shred the removed cabbage. cut the shell, simulating petals, so which it will open like a flower. Place in salted ice water and refrigerateseveral hrs.
    3. Drain well. Combine 2 c. shredded cabbage with the potaotes, onions, Large eggs
    4. (save a little to garnish the top of salad, Pickle, salt and pepper. Add in the French dressing mayonnaise or possibly salad dressing, that have been combined, and toss lightly. Heap the salad in the center of the cabbage shell and sprinkle with the remaining minced egg. Sprinkle the cabbage petasl with minced Parsley serves 6-8
