Butternut Bredie
A Bredie in South Africa is a stew. This recipe comes from Tannie Evita (Auntie Evita) a afrikaans lady portrayed by the comedian Pieter Dirk Uys . It's a straight-forward, non-fussy recipe, so it's one you'll be able to throw together during a busy week day to ensure your family gets a nutritious yet tasty dinner. Ingredients
- 500 g pumpkin or butternut
- 1 onion, sliced
- 1 kg shoulder of lamb
- 1 chilli
- 1 tbs grated ginger
- 1 cinnamon stick
Directions
- Peel and cut pumpkin into large pieces.
- Sauté onion in oil in a large, heavy-based pot until transparent.
- Cut lamb into small chunks and place on top of onions.
- Add chopped chilli and ginger, cinnamon stick, salt and a little water if necessary.
- Cook for half an hour, then add pumpkin pieces and cook for a further half hour, covered, until soft.
- Serve with rice and sambals or grated quince
