  • Buttermilk Fried Chicken

    Ingredients

    • 1 x fryer chicken - (3 lbs) cut into pcs
    • 2 c. buttermilk
    • 6 x garlic cloves smashed
    • 1 lrg onion sliced
    • 1 c. minced mixed fresh herbs (parsley, tarragon, thyme)
    • 1/2 tsp paprika
    • 1/2 tsp cayenne pepper
    • 2 c. flour
    • 1/4 tsp garlic salt
    • 1/4 tsp onion salt
    • 1/2 tsp cayenne pepper Salt to taste Freshly-grnd black pepper to taste
    • 3 c. solid vegetable shortening

    Directions

    1. Soak chicken in buttermilk with garlic, onions, herbs, paprika, and cayenne pepper. Chill overnight or possibly at least 8 hrs. Drain in colander, leaving some herbs on chicken.
    2. In a large paper grocery bag, mix flour with seasonings. Meanwhile, heat 3 c. shortening in cast-iron pan till 350 degrees.
    3. Place chicken pcs in bag with flour and shake, let sit 1 minute, then shake again. Add in chicken to warm pan and fry on 1 side for 20 min, then turn to finish.
    4. This recipe yields 4 servings.
