Bubba's Beer Batter Shrimp
Ingredients
- 1 lb unpeeled large fresh shrimp
- 1/4 c. all-purpose flour
- 1/4 c. cornstarch
- 1/8 tsp salt
- 1/4 c. beer
- 2 Tbsp. butter or possibly margarine melted
- 1 x egg yolk Vegetable oil for frying
Directions
- Peel shrimp, leaving tails intact; devein, if you like. Combine flour, cornstarch, and salt. Add in beer, butter, and egg yolk; stir till smooth.
- Pour oil to depth of 2 inches into a Dutch oven; heat to 375 degrees. Dip shrimp into batter; fry, a few at a time, till golden brown. Drain on paper towels.
- This recipe yields 2 servings.
