  • Beer Battered Shrimp With Chipotle Dipping Sauce

    Ingredients

    • 1 lb Shrimp - (21 to 25) peeled, deveined Oil for frying
    • 1/2 c. Soy sauce
    • 1 Tbsp. Chipotle pepper in adobe sauce
    • 1 Tbsp. Chopped ginger
    • 3 Tbsp. Lime juice
    • 1 Tbsp. Mirin
    • 1 1/2 c. All-purpose flour
    • 1/2 c. Cornstarch
    • 1 Tbsp. Salt
    • 1 bot Lite beer - (12 ounce)

    Directions

    1. Preheat oil to 365 degrees.
    2. In a small bowl, whisk together all the dipping sauce ingredients. Transfer to a serving bowl, cover and set aside.
    3. In a medium-size bowl, combine all the dry ingredients for the batter. Slowly, whisk in beer, till combined. If not using right away cover and chill for later use.
    4. Gently toss shrimp in the batter, to coat. Shake gently to remove excess batter and with slotted spoon, carefully fry in warm oil for 5 to 6 min or possibly till golden. Cook in batches to avoid over crowding. Remove shrimp with a spider or possibly slotted spoon and place on paper towels to drain. Serve warm with dipping sauce.
    5. This recipe yields 4 servings.
