  • Brown Sugar Apple Cake

    Ingredients

    • 1 x egg
    • 1/2 c. brown sugar
    • 1 c. flour
    • 3/4 tsp baking soda
    • 1/4 tsp salt
    • 1/4 c. lowfat milk
    • 3 Tbsp. butter
    • 1 tsp cinnamon
    • 1 tsp vanilla extract
    • 1/2 tsp allspice
    • 1 lrg baking apple (Macintosh, Cortland, etc.) Streusel Topping
    • 1 Tbsp. brown sugar
    • 1 Tbsp. sugar
    • 1 tsp butter -- softened
    • 1/2 tsp cinnamon

    Directions

    1. Preheat oven to 350 . grease an 8x8" glass pan. Combine egg and brown sugar in a large mixing bowl. Beat well. Add in flour sifted with baking soda and salt. Blend on low speed till mixed. Add in lowfat milk, melted butter, cinnamon, vanilla and allspice, mixing into a smooth batter. Peel and core apple and cut off core.
    2. Thinly slice apple pcs. Spoon batter into greased pan, smoothing to the edges with the back of a spoon. Place apples in rows covering the top of the batter.
    3. Sprinkle with streusel topping. Bake for 25 min, till springy to the touch. Let cold before cutting. Sprinkle with powdered sugar, if you like.
    4. Streusel Topping: Mix by crumbling with your fingers in a small bowl.
