  • Broccoli with Yogurt Sauce, the garden

    Ingredients

    • 1/2 head of broccoli, cut into florets with stems
    • 4 tbs Greek yogurt
    • 2 tsp Dijon-style mustard
    • 1 tsp prepared horseradish
    • 1 tsp white balsamic vinegar
    • 1 tbs good olive oil

    I’m trying to post more vegetable recipes.

    It’s not that we don’t eat our vegetables…. We do.

    We eat lots and lots of vegetables.

    They just don’t seem very interesting on their own.

    When I was a child the only fresh vegetables we had were green beans, sweet corn and peas in summer; carrots rutabagas the rest of the year.

    Since there were no farmers markets, we only had what my mother grew herself. That meant we mainly had canned vegetables the rest of the year: peas and carrots, French-style green beans, and corn. Their only salvation was that my mother put browned butter on them all.

    She love browned butter.

    When I was on my own I discovered the world of frozen vegetables.

    It was wonderful. The Jolly Green Giant became my best friend.

    I loved them all: broccoli, Brussels sprouts, cauliflower…..

    Then I got married. Mon mari liked fresh vegetables (hates fish; loves veggies).

    The rest, as they say, is history. Other than spinach in winter and peas, all our veggies are fresh, and most of them from my own garden.

    But I really ought to do more with browned butter……

    Broccoli with Yogurt Sauce

    Total time: 25 minutes

    Ingredients:

    Instructions:

    Put broccoli in a steamer basket in a saucepan with an inch of water.

    Put on medium heat and steam for 10 minutes or until just tender when pierced with a knife.

    Remove from pan and set aside. Empty pan

    Gently heat remaining ingredients, stirring to combine.

    Add broccoli and heat through. Serve.

    Speaking of gardens….

    My shallots and onions are starting to sprout. I planted them a full month earlier than usual this year.

    Which means I planted them when I was supposed to.

    Which also means I have a whole month more of hoeing to do. Once mon mari does the roto-tilling I have to hoe every week to keep the weeds out and the soil loose

    When I hoed the first time I just made sure that the dirt was well-turned.

    This time I’m picking out the weeds and grass that didn’t die with the previous tilling and hoeing.

    If you look at the photo below you can see that I’ve finished the half on the left. It’s now ready to plant. The right awaits my hoe.

    I have a universal gym and an exercise bike in the house. I do cardio exercise every day and lift weights 3 times a week. I work at keeping fit. (Probably not as hard as I could or should….. But I do it)

    Hoeing uses a whole different set of muscles and upper body cardio is a lot harder than lower body cardio.

    I’m sure my work-outs all winter helped a lot…… But not as much as I had hoped.

    Just thought you’d like to know – hoeing is hard work.
