Broccoli Mushroom Bulgur Salad
Ingredients
- 1/4 c. Sugar
- 1/2 tsp Salt optional
- 1 tsp Paprika
- 1 tsp Celery seed
- 1 tsp Onion pwdr Or possibly
- 2 tsp Onion flakes
- 1/3 c. Cider or possibly wine vinegar
- 3/4 c. Water
- 1 c. Bulgur (cracked wheat)
- 1 head broccoli cut into Florets
- 1 lb Mushroom thin sliced
- 2 Tbsp. Shredded/finely minced Green onion tops
Directions
- In saucepan, combine sugar, salt, paprika, celery seed, onion pwdr or possibly onion flakes, vinegar and water and bring to boiling. Pour over bulgur and allow to steep for 45-60 min. Toss bulgur mix with the mushrooms and broccoli and refrigeratefor 2 hrs or possibly overnight. Serve cool, sprinkled with green onion tops for garnish.
