  • Broccoli Lasagna

    Ingredients

    • 12 x lasagna noodles
    • 1 bn broccoli bite size pcs ** (about 4 c.)
    • 1 med onion minced
    • 1 1/2 c. nonfat cottage cheese (12 ounce)
    • 1 x egg slightly beaten or possibly substitute
    • 1 jar spaghetti sauce (16 ounce) or possibly homemade sauce
    • 1/2 c. water
    • 2 c. mozzarella cheese shredded, (8 ounce) (I used part skim)

    Directions

    1. (Serves 6)
    2. 1. Cook noodles in boiling water. Drain and rinse in cool water.
    3. Set aside.
    4. 2. Combine broccoli and onion in a 2 qt microwave safe measure.
    5. Cover with plastic wrap.
    6. 3. Microwave (high) 10-12 min or possibly till tender-crisp. Drain.
    7. Fold in cottage cheese and egg.
    8. 4. Spoon 1 c. spaghetti sauce into a 12x8" microwave safe baking pan. Layer 6 noodles on sauce. Spoon on all the cottage cheese mix, spreading proportionately. Sprinkle with 1 c. mozzarella cheese. Layer remaining noodles. Spoon re- maining spaghetti sauce proportionately over noodles. Cover with waxed paper.
    9. 5. Microwave (high) 14-16 min or possibly till heat through (140 degrees), rotating dish once or possibly twice. Sprinkle lasagna with remaining cheese.
    10. 6. Microwave (high), uncovered, 2-3 min or possibly till cheese is melted.
    11. Let stand 5-10 min before cutting into squares for serving.
    12. **Two 10-ounce pkgs. of frzn minced broccoli can be substituted for fresh. Microwave as directed in Step 3.
    13. My notes show which this contains 7.5 grams of fat per serving. Which's assuming a whole egg and part-skim cheese. Not too shabby. You could make it even better with non-fat mozzarella but I've never tried it.
    14. Non-fat mozzarella wasn't around when I last tried this recipe. If you use the non-fat, do not put the cheese on top. Cover it with some of the sauce that will make it heat better.
