    I found this recipe from Martha Stewart in my recipe box tonight and decided to give it a try. It was delicious! I was so excited to make my own bread crumbs in my food processor. I know I need a life. This is a great side dish if you like broccoli casserole. It was a little lighter than what I have had in the past. Give it a try you will love it NO BULL!

    Ingredients

    • 3 slices white sandwich bread
    • 3 Tbsp. olive oil
    • course salt and ground pepper
    • 1/4 cup flour
    • 3 cups milk
    • 2 heads if broccoli ( 2 lbs. total) Florets finely chopped
    • stalks peeled and finely chopped
    • 1 cup shredded cheddar cheese
    • 1/4 cup of shredded parmesan cheese

    Directions

    1. Preheat oven to 450 with rack in upper third. In a food processor pulse bread and 1 TBSP. oil until large crumbs form. season with salt and pepper and set aside.
    2. In large pan heat 2 TBSP. oil over med. Whisk in flour, cook stirring constantly for 1 minute. Gradually whisk in milk. Bring to a boil, add broccoli. Reduce to a simmer. Cook stirring occasionally until broccoli is tender 15 to 20 minutes. Remove from heat stir in 3/4 cup of the cheese.
    3. Transfer mixture to a shallow 2 quart baking dish. Top with bread crumbs and remaining 1.4 cheese. Sprinkle with parmesan cheese. Bake until breadcrumbs are golden 6 to 8 minutes. Let rest 5 minutes before serving.
