The best part is the buttery cracker topping. Creamy, rich Broccoli Casserole comin’ atcha today! It’s always the star of the side dishes at our family holidays, but it’s so easy to make you can make it for a random Sunday night dinner, too! I’ve made it for Easter, Christmas, Thanksgiving – pretty much any holiday that needs a delicious casserole – but my family loves it so much I get requests for it all year. I’m always happy to oblige because it’s a delicious stir and bake side dish that I can make with my eyes closed. And the topping! The cracker topping is what makes it. People can’t get enough of it! It’s so good even the kids aren’t fussy about the broccoli. Some cheese and a crunchy topping is an easy way to get them to eat their greens, for sure! This is everything you want in a side dish – a creamy sauce, all the pretty green from the broccoli, and a buttery, crunchy topping. It goes with everything – baked ham, turkey, meatloaf, chicken… I could go on and on, but I want to tell you how to make it! Put this one on your next holiday menu and, I promise you, everyone will be begging you for the recipe. You Only Need 7 Ingredients! I hate complicated side dishes and this Broccoli Casserole is anything but! You only need seven simple ingredients and, if you’re like me, you might already have them on hand. Combined together they create the most amazing broccoli side dish – here’s what you’ll need: Thawed frozen broccoli Mayonnaise Shredded sharp cheddar cheese Condensed cream of mushroom soup Eggs Crushed Ritz crackers Melted butter How to Thaw Frozen Broccoli I love to use frozen broccoli for this casserole, but you do have to thaw it first so your casserole is really nice and creamy. Maybe it’s obvious, but I thought I’d share a couple of easy ways to do this: The easiest way to thaw it is in the refrigerator overnight. As it thaws, the liquid will collect in the bottom of the bowl (or in the bag) and you’ll want to drain that off before you add it to your casserole. If you’re like me and forget to toss it in the fridge, you can thaw it in a bowl of water on the counter but it will need a little time to completely thaw out. Then just drain it and you can make the recipe. Mix It, Top It and Bake It! Only three steps in making Broccoli Casserole! You have to love that and it doesn’t get any easier than this: Combine the broccoli, mayonnaise, cheese, soup, and eggs together in a bowl. In a separate bowl, combine the crushed crackers with the melted butter. Spread the broccoli mixture in a baking dish coated with cooking spray, sprinkle the cracker topping over the top and it’s ready to go in the oven! Bake the Broccoli Casserole for 30 minutes at 350 degrees F. or until it’s fully set and cooked through. As it bakes that buttery topping will brown and get all crispy and crunchy. Inside the casserole will bake into creamy, cheesy, goodness. I like to let the casserole stand for a few minutes before I serve it so it’s not molten hot. This is such an easy side dish – simple ingredients, three steps and you’re set. Don’t you just love that? I know I do and it’s why I’ve been making it for so long!
