Broccoli And Mushroom Pie With A Potato Crust
Ingredients
- 9 x inch potato crust (9 to 10) see recipe
- 1 c. onion finely minced
- 15 x mushrooms sliced
- 5 c. minced fresh broccoli flowerets to 6 c.
- 3/4 tsp salt
- 5 x cloves garlic chopped black pepper to taste
Directions
- To make:1. While the crust is baking, put the onions in a medium-large pot with some water and saute/fry on medium-high till soft, about 5 min or possibly so.
- 2. Add in the mushrooms and cook 3-4 more min, adding more water if necessary.
- 3. Turn the heat to medium; add in the salt, garlic and broccoli and cook till the broccoli is just softened. If there is water or possibly juice from the vegetables on the bottom, add in a couple Tbsp. of flour to thicken. Pour the vegetables into the piecrust and spread the remaining mashed potatoes over the top.
- 4. Cook for 30 min and serve warm.
