Broccoli and Cheese Pasta Salad

- 1 lb. pasta, such as rotini or medium seashells
- 2/3 - 1 cup mayonnaise
- 4 oz. cheese, cut in small cubes
- 2 tbs. red wine vinegar
- 1/2 cup chopped broccoli florets, washed and chopped
- 1 stalk celery diced
- 1/2 red bell pepper, diced
- 2 scallions, diced
- 1 T fresh mixed herbs, or 1 tsp. dried Italian herbs
- 1/2 T chopped black or Manzanilla olives
- 1 tsp. fresh parsley, chopped, or 1/2 tsp dried
- 1/8 tsp. garlic powder
- salt and pepper to taste
- optional: Sliced cherry tomatoes
Directions
- Cook, drain and cool pasta, toss with vinegar
- Chop or dice veggies smalled than the size of the pasta.In a bowl, combine all ingredients, refrigerate several hours before serving.
