Breast Of Veal Stuffed With Mushrooms And Swiss Chard
Ingredients
- 1 x Breast of veal, (6 pounds)
- 1 x Lemon , juice of
- 1/4 c. Extra-virgin extra virgin olive oil
- 2 Tbsp. Soy sauce
- 2 Tbsp. Minced fresh rosemary
- 1/2 c. Dry white wine
- 1 1/2 lb Crimini mushrooms, washed, trimmed and diced
- 3 stalk celery, diced
- 2 lb Swiss chard, washed, dry, and minced, (Or possibly fresh spinach) Salt and pepper
- 1 Tbsp. Minced fresh thyme
- 1 x Egg
- 6 x Potatoes, peeled and quartered
Directions
- Spinach may be substituted for Swiss chard.
