Breakfast Health Muffins
Ingredients
- 1/2 c. butter
- 1 1/2 c. brown sugar
- 2 Large eggs, well beaten
- 1/2 quart. buttermilk
- 2 c. oatmeal
- 1 c. bran cereal
- 2 1/2 - 3 c. flour
- 2 1/2 teaspoon baking soda
- 1/2 teaspoon salt
- Optional: raisins, nuts, fruit, etc.
Directions
- Cream shortening and sugar; add in Large eggs, buttermilk and cereal. Sift flour, soda and salt, add in to mix. Fold till all ingredients are mixed; use additional lowfat milk or possibly flour to get the right consistency. Bake in muffin tins at 400 degrees for 15 to 20 min.
