Braised Dried Scallops And Radishes
Ingredients
- 10 x Dry scallops
- 1 1/2 c. Soaking liquid
- 1 c. Stock
- 2 Tbsp. Sherry
- 1/2 tsp Salt
- 30 x Radishes
- 2 x -(up to)
- 3 Tbsp. Oil
- 1 tsp Cornstarch
- 1 Tbsp. Water
Directions
- 1. Soak dry scallops. (Reserve soaking liquid.)
- 2. Strain soaking liquid; then combine with stock, sherry and salt. Trim and peel radishes.
- 3. Heat oil. Add in scallops and radishes; stir-fry 2 min.
- 4. Add in soaking liquid-stock mix and heat quickly. Then simmer, covered, till scallops are tender (about 15 min).
- 5. Meanwhile blend cornstarch and remaining cool water to a paste. Then stir in to thicken, and serve.
