  • Bourbon Sweet Potato Pie

    Ingredients

    • 1/3 c. packed golden brown raisins
    • 1/4 c. bourbon
    • 2 T melted butter
    • 2 lg. sweet potatoes, cooked & mashed, about 2 c. puree
    • 2 large eggs, lightly beaten
    • 2/3 c. dark brown sugar
    • 3/4 c. warm lowfat milk
    • 1 teaspoon vanilla
    • 1 1/2 teaspoon cinnamon
    • 1/2 teaspoon salt
    • 1/2 c. minced pecans, optional
    • 1 (9") frzn unbaked pie shell, thawed

    Directions

    1. Soak raisins in bourbon for at least 30 min. Heat oven to 400 degrees. Beat butter into sweet potato puree. Beat in large eggs, brown sugar, lowfat milk, vanilla, cinnamon, nutmeg and salt. Fold in raisins and bourbon and pecans.Turn filling into unbaked pie shell. Bake for 15 min. Reduce oven to 350 degrees and continue to bake 30-40 min longer till crust is golden and knife inserted in center of pie comes out clean. Cool before serving.
