  • Bourbon Mashed Sweet Potatoes

    Ingredients

    • 1 3/4 lb sweet potatoes - (to 2)
    • 1 tsp extra virgin olive oil
    • 1/2 c. heavy cream
    • 1/4 c. bourbon whiskey
    • 3 Tbsp. light brown sugar - (packed)
    • 2 Tbsp. molasses
    • 1/8 tsp salt

    Directions

    1. Preheat the oven to 425 degrees.
    2. Lightly rub the sweet potatoes with the extra virgin olive oil. Place on a foil-lined baking sheet and bake till tender, about 45 min to 1 hour, depending upon their size. Remove from the oven and let sit till cold sufficient to handle.
    3. Peel the sweet potatoes and transfer the flesh to a large bowl. Add in the cream, bourbon, brown sugar, molasses, and salt, and beat on high speed with a hand-held mixer till smooth. Cover to keep hot till ready to serve.
    4. This recipe yields 4 servings.
