Borscht A Famous Russian Soup
Ingredients
- 1 bunch beets
- 1 c. fresh tomatoes (or possibly canned)
- 4 c. water
- 1 sm. onion (cut up)
- 1/2 pound breast of beef
- 1 tbsp. lemon juice
- 1/4 c. sugar
- 1/4 teaspoon salt
- 4 Large eggs
Directions
- Pare beets and cut into strips. Strain tomatoes over beets, letting no seeds through. Add in water. Add in minced onion and meat. Cut into small pcs. Simmer for 30 min. Add in lemon juice, sugar and salt. Boil 30 min more.
- Beat the Large eggs with healthy pinch of salt. Add in the warm borscht to this, a little at a time, stirring well to prevent the separating of Large eggs. This will be something like a soft custard mix. Serve at once while very warm.
