    Blueberry Oatmeal Banana Cinnamon Muffins

    Simple, delicious and not overly sweet, these muffins are great for breakfast or snack time!

    Ingredients

    • 2 Ripe Bananas, crushed
    • 1 Cup Fresh or Frozen Blueberries, (if using frozen, let thaw for about 20 minutes)
    • 1 Egg
    • 1 Cup All Purpose Flour
    • 1 1/2 Cups Oats
    • 2/3 Cup Brown Sugar
    • 1 Tsp. Baking Powder
    • 2 Tsp. Cinnamon
    • 1/2 Cup Butter
    • 1 Tsp. Vanilla

    Directions

    1. Heat oven to 350 degrees.
    2. Crush bananas in a small bowl and set aside.
    3. Beat together sugar and butter.
    4. Beat in egg and vanilla.
    5. Stir in crushed bananas and blueberries
    6. In a medium bowl, mix together the flour, oats, cinnamon and baking powder.  Stir into banana mixture
    7. Grease 12 muffin tins, or use muffin liners.  Fill about 3/4 way with batter
    8. Bake for 20 minutes or until toothpick inserted in the center comes out clean.
    9. This recipe makes 12 muffins.
