Blueberry Oatmeal Banana Cinnamon Muffins
Simple, delicious and not overly sweet, these muffins are great for breakfast or snack time! Ingredients
- 2 Ripe Bananas, crushed
- 1 Cup Fresh or Frozen Blueberries, (if using frozen, let thaw for about 20 minutes)
- 1 Egg
- 1 Cup All Purpose Flour
- 1 1/2 Cups Oats
- 2/3 Cup Brown Sugar
- 1 Tsp. Baking Powder
- 2 Tsp. Cinnamon
- 1/2 Cup Butter
- 1 Tsp. Vanilla
Directions
- Heat oven to 350 degrees.
- Crush bananas in a small bowl and set aside.
- Beat together sugar and butter.
- Beat in egg and vanilla.
- Stir in crushed bananas and blueberries
- In a medium bowl, mix together the flour, oats, cinnamon and baking powder. Stir into banana mixture
- Grease 12 muffin tins, or use muffin liners. Fill about 3/4 way with batter
- Bake for 20 minutes or until toothpick inserted in the center comes out clean.
- This recipe makes 12 muffins.
