Blueberry Bread, Gluten Free
Ingredients
- 1 pkt dry yeast
- 2 c. Gourmet Blend flour
- 1/2 c. instant nonfat dry lowfat milk
- 2 tsp xanthan gum
- 1 tsp salt
- 1/2 tsp baking soda
- 3 Tbsp. sugar
- 1/2 c. blueberries
- 2 Tbsp. margarine melted
- 2 x Large eggs room temperature, beaten
- 1 tsp rice vinegar
- 1/2 c. blueberry syrup heated
- 1/4 c. water
- 3/4 c. plain yogurt
- 1/4 c. blueberries
Directions
- Combine all ingredients in order listed. Last 1/4 c. of blueberries should be added at the last kneading (10 beeps). Use the fruit bread setting. This is a very moist dinner bread. If you desire to reduce the moisture and make a larger loaf, increase the flour by 1/2 c..
