  • Blue Ribbon Sweet Potato Pie

    Ingredients

    • 4 lg. sweet potatoes, cut off ends and wash thoroughly
    • 1/3 c. lowfat milk
    • 1 lg. serving spoon butter
    • 1 teaspoon salt
    • 1 egg

    Directions

    1. Fill a saucepan large sufficient to hold the potatoes with water, add in 1 tsp salt, and 2 tsp of butter. Cook on a medium flame till tender when pierced with a fork. After cooking, cover with cold water to cool potatoes so which they can be handled more easily.
    2. Put together all ingredients and blend well. Sprinkle 1/2 tsp of grnd nutmeg, cinnamon, and 1 cup sugar; stir mix thoroughly.Again, sprinkle 1/2 tsp grnd nutmeg and 1/2 tsp cinnamon. Add in 1 cup sugar, stir mix thoroughly. Taste mix; it should be sweeter than you would normally like it; baking decreases the sweetness.
    3. Blend the entire mix with an electric beater, checking beaters periodically to remove any strings that may come from the sweet potatoes. After mix has been thoroughly blended, you're ready for the pie crust. You can use this pie crust recipe or possibly you can buy the ready-made crust.
    4. Pour the mix into two 9-inch pie shells and bake at 350 degrees for about 2 hrs, or possibly till mix is well set and the crust is golden.
