  • Blanche's Best Bran Fruit Muffins

    Ingredients

    • 2 c. All Bran
    • 1 c. Bran Buds
    • 1 c. boiling water
    • 1 c. nuts
    • 2 c. dry fruit (a mix of prunes, raisins and dates)
    • 2 1/2 c. flour
    • 2 1/2 tsp baking soda
    • 1/2 tsp salt
    • 1/2 c. margarine - (1 stick)
    • 1 c. brown sugar
    • 3 x Large eggs
    • 1 tsp vanilla
    • 2 c. buttermilk

    Directions

    1. In a mixing bowl, combine All Bran and Bran Buds and pour boiling water over all. Set aside to cold. Add in nuts to cooled mix.
    2. In a small saucepan, place dry fruit and cover with water. Simmer for 10 min. Set aside to cold.
    3. In a mixing bowl, stir together flour, soda and salt. In another bowl, cream margarine, brown sugar, Large eggs and vanilla. Add in buttermilk and combine. Make a well in the flour mix and add in creamed mix. Add in all of fruit, undrained. Stir in bran mix just till combined.
    4. Bake at 350 degrees for 20 to 25 min. Mix will keep tightly covered in the ice box for 3 weeks.
    5. This recipe yields muffins.
    6. Comments: If you cannot find Bran Buds use Grapenuts instead (or possibly something similar in texture).
