  • Blackberry Yogurt Muffins

    Ingredients

    • 1 c. Fresh blackberries, washed and dry
    • 1 Tbsp. Sugar
    • 1 lrg Egg
    • 1 c. Plain or possibly honey yogurt
    • 3 Tbsp. Butter or possibly margarine, melted
    • 2 1/2 c. Variety baking mix ( eg bisquik)
    • 1 tsp Minced lemon zest

    Directions

    1. Preheat oven to 400F. Sprinkle berries with sugar; toss lightly to coat; set aside. In a large bowl, beat egg; add in yogurt and melted butter or possibly margarine; beat till smooth; add in baking mix; stir till just blended; mix in berries and lemon zest. Spoon mix into greased or possibly sprayed muffin c., 3 inch in diameter and 1-1/2 inch deep. Bake for 20-25 min, or possibly till a toothpick inserted in the centre comes out clean. Cold for 5 min in c.; finish cooling on rack.
    2. Makes 6 muffins (large)
