Blackberry Yogurt Muffins
Ingredients
- 1 c. Fresh blackberries, washed and dry
- 1 Tbsp. Sugar
- 1 lrg Egg
- 1 c. Plain or possibly honey yogurt
- 3 Tbsp. Butter or possibly margarine, melted
- 2 1/2 c. Variety baking mix ( eg bisquik)
- 1 tsp Minced lemon zest
Directions
- Preheat oven to 400F. Sprinkle berries with sugar; toss lightly to coat; set aside. In a large bowl, beat egg; add in yogurt and melted butter or possibly margarine; beat till smooth; add in baking mix; stir till just blended; mix in berries and lemon zest. Spoon mix into greased or possibly sprayed muffin c., 3 inch in diameter and 1-1/2 inch deep. Bake for 20-25 min, or possibly till a toothpick inserted in the centre comes out clean. Cold for 5 min in c.; finish cooling on rack.
