  • Blackberry Jam Pie

    Ingredients

    • filling
    • 3 x egg yolks
    • 1 tsp vanilla extract
    • 3/4 c. sugar
    • 1 c. blackberry jam
    • 2 Tbsp. flour
    • 1 c. buttermilk meringue
    • 2 x egg whites
    • 1/4 tsp cream of tartar
    • 4 Tbsp. powdered sugar
    • 1/2 tsp vanilla extract

    Directions

    1. Reheat oven to 350 degrees
    2. Combine all the filling ingredients in the top of a double boiler. Cook, stirring, over warm water till mix thickens to custard consistency. Remove from heat & beat with a wooden spoon till slightly cooled/
    3. Prepare meringue. Whip egg whites till frothy. Beat in cream of tartar & continue beating till peaks start to create. Beat in powdered sugar 1 TBSP at a time, then beat in vanilla.
    4. Pour custard filling into baked pie shell. Cover w/meraingue. Bake for 10-15 min.
