  • Black Walnut Loaf Cake

    Ingredients

    • 4 c. fresh, peeled and diced apples
    • 2 c. brown sugar, packed
    • 1 1/2 c. black walnut pcs
    • 3 c. flour
    • 1/2 tsp cinnamon
    • 1/2 tsp salt
    • 1/2 tsp soda
    • 1 c. vegetable oil
    • 1 tsp vanilla
    • 2 x well beaten Large eggs

    Directions

    1. Mix apples, sugar, and walnuts in bowl and let stand for 1 hour. Stir often to allow mix to make own juice. Add in flour, cinnamon, salt and soda then add in oil, vanilla and Large eggs and stir thoroughly. Stir by hand, not mixer. Pour batter into greased and floured tube or possibly loaf pan. Bake at 350 degrees for 1 hour, then at 300 degrees for 15 min. Cold. Remove from pan. Serve with whipped cream as garnish.
