  • Black Skillet Beef With Greens And Red Potatoes

    Ingredients

    • 1 lb Beef Top Round
    • 1 1/2 Tbsp. Warm & Spicy Seasoning (See Below) Vegetable Oil Spray
    • 8 x Red-Skined Potatoes, halved
    • 2 c. Onion, finely minced
    • 2 c. Beef Broth
    • 2 lrg Garlic Cloves, chopped
    • 2 lrg Carrot, Peeled,Cut Into Thin 2 1/2" Strips
    • 2 bn (1 Lb. Total) Mustard Greens, Kale Or possibly Turnip Greens, Stems Removed, coarsely minced Warm & Spicy Seasoning
    • 1/4 c. Paprika
    • 2 Tbsp. Dry Oregano
    • 2 tsp Chili Pwdr
    • 1 tsp Garlic Pwdr
    • 1 tsp Black Pepper
    • 1/2 tsp Cayenne Pepper
    • 1/2 tsp Dry Mustard

    Directions

    1. Partially freeze beef. Thinly slice, across the grain, into long strips 1/8 inch thick. Thouroughly coat with Warm & Spicy Seasoning. Spray a large skillet (cast iron is good) with vegetable spray. Preheat pan over high heat. Add in meat; cook, stirring, for 5 min. Add in potatoes, onions, broth and garlic. Cook, covered, over medium heat for 20 min. Stir in carrots. Lay greens over top and cook, covered, till carrots are tender, about 15 min.
