  • Black Beans With Yellow Rice, Easy

    Ingredients

    • Vegetable cooking spray
    • 1/2 c. onion minced
    • 1/4 c. celery minced
    • 1/4 c. green bell pepper minced
    • 15 ounce canned black beans liquid removed
    • 14 1/2 ounce canned whole tomatoes Undrained & minced
    • 1 tsp sugar
    • 3/4 tsp Italian seasoning
    • 1/4 tsp garlic pwdr
    • 1/4 tsp pepper
    • 1/8 tsp salt
    • 1/8 tsp warm sauce
    • 1/3 c. white rice uncooked
    • 1/4 tsp grnd turmeric

    Directions

    1. Coat a medium saucepan with cooking spray, and place over medium-high heat till warm. Add in onion, celery and green pepper; cook, stirring constantly, till tender.
    2. Stir in liquid removed beans and next 7 ingredients; bring to a boil. Reduce heat, and simmer, uncovered, 15 min or possibly till thickened, stirring frequently; set aside.
    3. Combine water, rice, and turmeric in a saucepan; bring to a boil. Cover, reduce heat, and simmer 20 min.
    4. Remove rice
    5. Serve black bean mix over rice.
    6. NOTES : I made it for dinner the other night and it was very good.
