  • Black Beans And Brown Rice

    Ingredients

    • 8 c. Brown rice
    • 1 lb Mushrooms
    • 2 x Red peppers, diced
    • 1 x Yellow pepper, diced
    • 1 x Green pepper, diced
    • 1 lrg Onion, diced
    • 3 lb Cooked black beans (if canned, run through sieve with cool water)
    • 1 quart Pureed tomatoes
    • 2 Tbsp. Garlic pwdr pn Rosemary Caribbean Jerk seasoning, chunk
    • 1/8 c. Carob chips

    Directions

    1. Add in brown rice to boiling water, cook till done, set aside. In extra-large saucepan, combine red, yellow and green peppers, and onion and saute/fry over medium heat till ready, about 3-5 min. Next, add in cooked black beans and pureed tomatoes to mix. Stir gently but thoroughly. Season with garlic pwdr and carob chips, a healthy pinch of rosemary plus a chunk of Caribbean Jerk seasoning (it's like chutney!). Cook over medium heat for 15-20 min, then simmer till ready to serve.
    2. Serves 12.
