  • Bitter Greens With Sweet Onions And Sour Cherries

    Ingredients

    • 1 c. Fresh sour cherries, pitted
    • 2 tsp Sugar, (2 to 3)
    • 1 Tbsp. Vegetable oil, cool press
    • 3 c. Sliced onion, sweet
    • 1 1/4 tsp Salt
    • 12 c. Fresh greens, leaves only
    • 1 c. Dry sour cherries, optional

    Directions

    1. CHERRIES: or possibly canned unsweetened sour cherries, liquid removed.
    2. SWEET ONION: Vidalia, Maui.
    3. GREENS: collards, red mustard, arugula, kale.
    4. Soak dry cherries for 15 min in warm water; drain.
    5. Place fresh or possibly canned cherries in a small bowl and sprinkle them with sugar. Let sit for about 10 min.
    6. Heat the oil in a large, deep skillet. Add in the onion and 1/2 tsp. of the salt, and saute/fry over high heat for about 5 min. Turn the heat to medium, cover the pan, and let the onion cook till very tender (1bout 10 more min).
    7. Begin adding the grees in batches (as much as will fit), sprinkling each addition with about 1/4 tsp. salt. Stir and cover between additions, letting the greens cook down for about 5 min each time, to make room for the next batch.
    8. When all the greesa re added and have wilted, stir in the sour cherries and cook for just about 5 min longer. Transfer to a platter,and sprinkle the dry cherries on top, if using. Serve warm or possibly hot, being sure to include some of the delicious cooking juices with each serving.
    9. Sufficient for 4 to 6: prep. 40 min, 15 mins. work.
