Bitter Greens Salad
Ingredients
- 2 bn arugula, washed
- 2 x heads endive
- 2 x heads radicchio
- 1 pkt PC Triple Cream Blue Brie cheese, coarsely, minced
- 1/4 c. toasted pine nuts
- 1/4 c. PC Balsamic Vinaigrette dressing c. salt and pepper, to taste
Directions
- Wash assorted greens. Tear into bite sized pcs and place in a salad bowl.
- Toss with the cheese and pine nuts.
- Drizzle with vinaigrette. Season with salt and pepper and serve.
