  • Billionaire Pie

    Ingredients

    • 8 ounce cream cheese
    • 3 1/4 ounce powdered sugar few drops red food coloring
    • 1/2 c. egg whites ds salt
    • 1 c. sugar
    • 1 tsp vanilla
    • 3 ounce grnd ritz crackers
    • 1 can crushed pineapple or possibly pineapple pie filling
    • 1 ct cold whip
    • 1/2 c. crushed pecans

    Directions

    1. For filling: Beat cream cheese and powdered sugar till creamy. Add in red food coloring till pink. For crust: Beat egg whites till stiff, adding sugar slowly; then add in salt and vanilla. Mix in Ritz crackers by hand. Pour into well-greased pie pan. Bake at 350 degrees for 30 min. Set aside to cold. When cold, pour creamed mix into crust.
    2. For topping: Top with pineapple, Cold Whip and pecans.

      I'm from Oklahoma City and ate with my grandma at Furr's in Shepard Mall many many times over the years. This pie is my absolute fave! I whole heartedly agree about the recipe! Thanks for sharing!

        I worked in the bakery of Furr's Cafeteria (in Tulsa) from 1983 to 1987. This is the only recipe on the internet for Billionaire pie that looks the same as the one I used back then. Before baking the pie shell with Ritz crackers, don't forget to coat the pan with "pan-smear" which is a mixture of equal amounts of flour and shortening (like a cup of each). What you don't use will be shelf stable, and works great for cakes and muffins.
        You can substitute sliced strawberries for the pineapple but the pineapple gives better color contrast with the pink cream-cheese filling.
        For heavens sake, use real whipped cream and not cool whip!!! Make your own. Whip whipping cream until it starts to get stiff and then add powdered sugar to taste. It's too easy!
