    This Apple Pie recipe uses a new thickener to create beautiful full fruit pies with minimal boil-out.

    Ingredients

    • For a deep dish pie plate!
    • 8 c. peeled, sliced tart apples (1/4" slices)
    • 2 T. lemon juice (if the apples are only marginally tart
    • 1 c. sugar
    • 1 t. cinnamon
    • 1/2 t. nutmeg
    • 1/4 t. cloves
    • 8 T. Ultra Gel (carnetfoods.com)
    • For a standard pie plate:
    • 6 c. peeled, sliced tart apples (1/4" slices)
    • 1 1/2 T. lemon juice (if desired)
    • 3/4 c. sugar
    • 3/4 t. cinnamon
    • 1/3 t. nutmeg
    • dash cloves
    • 6 T. Ultra Gel (carnetfoods.com)
    • Homemade or commercial pie crust, unbaked

    Directions

    1. Peel and slice apples to get a nicely packed measure. Watch measurement closely!
    2. Add lemon juice (if desired), sugar, spices, and Ultra Gel and toss to coat.
    3. Cover and microwave for five minutes, stir, and continue to cook until a fork can be inserted and apples are evenly softened. Do not overcook. You will see the sugar-Ultra Gel mixture start to thicken the released juices.
    4. Allow to cool for 15 minutes, then turn into the prepared pie crust.
    5. Finish the crust as desired, sealing edges well.
    6. Bake at 400 degrees for about 45 minutes, covering edges with aluminum foil if they are threatening to get too dark. Remember that the filling doesn't need to come to boiling temperatures to thicken because of the instant thickener used. If the filling starts to seep through the vent holes, the pie should be done and can be removed from the oven.
