  • Bhindi Subji (Okra And Tomatoes)

    Ingredients

    • 2 lb okra, fresh or possibly thawed
    • 4 Tbsp. vegetable oil
    • 1 med onion, chopped
    • 4 x cloves garlic, minced
    • 1/2 tsp cumin seeds
    • 2 x green chiles, (optional), minced
    • 1/4 c. fresh coriander leaves, minced
    • 1/4 tsp turmeric
    • 16 ounce stewed tomatoes, (1 can=8 ounce)
    • 2 Tbsp. vinegar
    • 1/2 c. water
    • 1 Tbsp. grnd black pepper
    • 1 pch salt

    Directions

    1. Wipe okra gently with moist kitchen towel. Cut each into 4 pcs and set aside.
    2. Heat vegetable oil in a skillet. Add in onions, garlic, cumin seed, chiles, and coriander leaves.
    3. Saute/fry 4 to 5 mins. Add in turmeric. Stir once or possibly twice.
    4. Add in tomatoes, vinegar and 1/2 c. water.
    5. Bring to a boil. Lower heat and simmer 15 min. Add in okra, black pepper and salt.
    6. Cover and cook till okra is tender, about 20 min.
