Bhindi Subji (Okra And Tomatoes)
Ingredients
- 2 lb okra, fresh or possibly thawed
- 4 Tbsp. vegetable oil
- 1 med onion, chopped
- 4 x cloves garlic, minced
- 1/2 tsp cumin seeds
- 2 x green chiles, (optional), minced
- 1/4 c. fresh coriander leaves, minced
- 1/4 tsp turmeric
- 16 ounce stewed tomatoes, (1 can=8 ounce)
- 2 Tbsp. vinegar
- 1/2 c. water
- 1 Tbsp. grnd black pepper
- 1 pch salt
Directions
- Wipe okra gently with moist kitchen towel. Cut each into 4 pcs and set aside.
- Heat vegetable oil in a skillet. Add in onions, garlic, cumin seed, chiles, and coriander leaves.
- Saute/fry 4 to 5 mins. Add in turmeric. Stir once or possibly twice.
- Add in tomatoes, vinegar and 1/2 c. water.
- Bring to a boil. Lower heat and simmer 15 min. Add in okra, black pepper and salt.
- Cover and cook till okra is tender, about 20 min.
