Mom's Okra And Tomatoes
Ingredients
- 4 slc Bacon, diced
- 2 x Diced onions
- 1/2 x Green pepper, diced
- 1 stalk celery, diced
- 1 can (28-30 ounce) tomatoes, undrained
- 1 pkt (9 ounce) frzn okra, sliced
- Cooked rice for 8
- 1 can (small) shrimp, liquid removed (opt.)
Directions
- Brown bacon slightly. Add in and cook over Low heat, all diced vegetables. Add in tomatoes and continue to simmer. Wash, stem and cook okra separately.
- Drain. Add in okra to other ingredients + some of okra cooking liquid. Season with salt and pepper to taste. Serve over cooked rice. Can add in shrimp with okra to dish.
- NOTES : I usually buy presliced frzn okra.
