Beth's Fruited Chicken Salad
Ingredients
- 4 c. minced cooked chicken
- 2 c. minced celery
- 2 c. halved seedless red or possibly green grapes
- 1 (15 ounce.) can pineapple tidbits, liquid removed
- 1 (11 ounce.) can mandarin oranges, liquid removed
- 1 c. toasted slivered almonds
- 1/2 c. mayonnaise
- 1/2 c. lowfat sour cream
- 2 tbsp. lemon juice
- 1/8 teaspoon salt
- 1/8 teaspoon white pepper
Directions
- Combine first 6 ingredients and toss. Mix mayonnaise, lowfat sour cream, lemon juice, salt, and white pepper. Add in to chicken mix and stir well. Chill. To serve, arrange escarole around edge of Cheese Tart Shells; spoon chicken mix on top.
