    I found this recipe while on my journey to find my 6 yr old son a great tasting cake. He has Tic's and we avoid all artifical dyes & flavors, sugars, dairy, gluten, corn, peanuts and yeast. You will LOVE this if you LOVE chocolate!!! Trust me...I sang hallelujah eating this for the first time. Anyone that is starting to eat allergy free like this understands :-O ...but you will love this even if you dont need to avoid the "allergy stuff". I would make this over any cake recipe any day! Its awesome :)

    Ingredients

    • 1 1/4 cups FLOUR BLEND - *If Gluten Free see below for blend
    • 1/2 cup unsweetened cocoa powder - Not Dutch
    • 1 teaspoon xanthan gum
    • 1 teaspoon baking soda
    • 3/4 teaspoon salt
    • 1 cup packed Maple granulated sugar
    • 2 teaspoons vanilla extract
    • 1/2 cup Rice milk or soy etc
    • 1/2 cup butter * I use "Better Life" non dairy butter
    • 1 large egg
    • 3/4 cup warm water or coffee
    • *FLOUR BLEND** - Make this in a big tupperware and store as your cooking flour ;-)
    • 1 1/2 cups sorghum flour
    • 1 1/2 cups potato starch or amaranth starch
    • 1 cup tapioca flour
    • 1/2 cup almond, bean or chestnut flour

    Directions

    1. Preheat oven to 350 F and grease 9 inch round, square or 11x17 nonstick. I use pampered chef mini loaf pan...works GREAT!
    2. Place all ingredients except warm water or coffee in a large bowl and blend with electric mixer. Add warm water or coffee until thoughly blended. Pour into pan
    3. Bake for 30-35 minutes or untill knife comes out clean
    4. ENJOY! I always add a maple sugar candy to the top :)
    5. ** If you need to avoid eggs let me know and ill send you another variation of this! Take care

      WOW...well i guess mostly allergy free. Sounds like you have quite the allergy avoidance issues :( As far as egg goes yes you can 1/2 cup of soften silken tofu instead of egg...can you have that? And I use rice milk so yes goat would be fine...as far as flour...I have no idea...Maybe a bean flour? I hope you can find a flour you can use, if I can help you out at all, please email anytime :-)

        OK - what if you can't use egg or the substitute they sell (allergic to both). Can't use any grains, so no rice flour. And, can't use cow dairy.
        Can you use Goat milk?
        Can't have soy, either.
        If we can't have almond, what other kind of flour (can't have cocnut) can you use in place of that in your flour mix?
