  • Best Ever Anzac Biscuits

    Ingredients

    • 2 c. rolled oats
    • 2 c. plain flour
    • 2 c. caster sugar
    • 1 1/2 c. desiccated coconut
    • 250 gm butter
    • 1/4 c. honey
    • 1 Tbsp. treacle
    • 1 tsp bicarbonate of soda
    • 1/3 c. boiling water

    Directions

    1. Combine oats, sifted flour, sugar & coconut in a large bowl; mix well. Place butter honey and treacle in a medium pan; stir over low heat till the butter is melted. Combine soda and boiling water in a small jug; pour into butter mix. Stir hot butter mix into dry ingredients; mix well. Spoon heaped tsp of mix about 3cms apart, onto greased oven trays; press down lightly. Cook in a slow over, 150 degrees C for about 20 mins or possibly till golden. Stand biscuits on trays for 5 mins; transfer to wire racks to cold.
