  • Anzac Biscuits (Cookies)

    Ingredients

    • 70 gm butter
    • 1 dsp golden brown syrup
    • 1/2 tsp bicarbonate of soda
    • 2 Tbsp. boiling water
    • 1/2 c. rolled oats
    • 1/2 c. coconut
    • 1/2 c. plain flour
    • 1/2 c. sugar

    Directions

    1. Preheat the oven to 180 c.
    2. 1. Put the oats, coconut, flour and sugar in a big mixing bowl.
    3. 2. Heat the golden brown syrup and butter together in a saucepan till warm.
    4. 3. Put the bicarbonate of soda and boiling water in a small bowl and mix then add in to the butter/syrup mix in the saucepan. ALLOW THE Mix TO FOAM.
    5. 4. Pour the melted mix on top of the dry ingredients and mix very well.
    6. 5. Drop teaspoonsful of the mix onto greased, non-stick oven trays, leaving room for the cookies to spread.
    7. 6. Bake for 20 min then take the tray out of the oven and leave the biscuits on the tray for 2 min then remove and cold on a wire rack.
