- Beef filet 180 gr
- Garlic 10 gr
- Red peppers 40 gr
- Potato 80 gr
- Red onions 50 gr
- Tomato 30 gr
- Cherry tomato 40 gr
- Sumac 5 gr
- Sumac dressing 1 cl
- Beef gravy 10 cl
Directions
- Pan sear the beef tenderloin then finish to cook in the oven.
- Roast the potato wedges and sauted the julienne of red onions.
- Cook the brunoise of onion in butter, slowly until cooked then season with sumac, salt and pepper.
- Roast and peel half of the red pepper and dice, julienne the other half.Cut the cherry tomato in half.
- Cut the tomatoes in julienne and wedges, toss everything together with fresh coriander leaves and sumac dressing
- Serve beef gravy
