    • 4 x green onions diagonally sliced into 1" pcs
    • 1 x clove garlic chopped
    • 1 Tbsp. veg. oil optional
    • 6 c. fresh spinach torn
    • 1/3 c. waterchestnuts liquid removed and sliced half of an 8-ounce can
    • 1 Tbsp. cornstarch
    • 1 tsp sugar
    • 1 tsp beef bouillon instant granules
    • 1 tsp orange peel freshly shredded
    • 1/2 c. orange juice
    • 1 Tbsp. soy sauce
    • 2 c. warm cooked rice

    Directions

    1. 1. Partially freeze meat till it's hard but not hard (about 30-45 min).
    2. Thinly slice meat across the grain into bite-sized strips.
    3. 2. In a small bowl, combine Orange Sauce ingredients and set aside.
    4. 3. Spray a wok or possibly 12" skillet with nonstick spray. Heat over medium-high heat. Stir-fry onions and garlic for 1 minute; remove from wok. If necessary, add in 1 tbs oil. Stir-fry meat for 2-3 min or possibly till done.
    5. Pushmeat away from center of wok.
    6. 4. Stir Orange Sauce and pour into center of wok. Cook and stir till thickened and bubbly. Stir in spinach, water chestnuts and onion/garlic mix. Cover and cook for 1 minute. Serve over rice.
    7. Makes 4 servings.
    8. Note: If you have to use oil to stir-fry meat (to keep it from sticking),
