  • Beef Chow Mein

    Ingredients

    • 3/4 pound grnd beef
    • 4 teaspoon fat
    • 4 tbsp. onions, minced fine
    • 1 1/3 c. celery, thinly sliced
    • 1 1/3 c. Chinese vegetables
    • 2 c. warm water
    • 1 teaspoon salt
    • 4 teaspoon cornstarch
    • 1 c. cool water
    • 4 tbsp. soy sauce
    • 2 c. cooked rice

    Directions

    1. Brown meat; drain off fat. Measure fat into pan; brown onion. Add in celery, Chinese vegetables, warm water, salt, and soy sauce; simmer 15- 20 min.
    2. Combine cornstarch with cool water; add in to mix. Cook till thickened, stirring continuously. Serve 3/4 c. over 1/2 c. rice per serving. Yield: 4 servings.
    3. 1 serving: 2 meat, medium fat exchanges; 2 bread-starch exchanges; 1 fruit exchange.
    4. Protein 18 gm, Fat 12 gm, Carbohydrate 39 gm, Sodium 2333 mg, Potassium 589 mg, Calories 336.
